Saturday Night
7:00 P.M.
4 Weeks Before
- Invite guests
- Think about Menu
- Think about logistics, where to set-up bar, buffet
- If you need extra help, contact them, check availability, put them “on hold”
3 Weeks Before
- Make detailed shopping list for both food and non-food items
- Buy non-perishables (phyllo dough, refrigerated pie crust, frozen puff pastry and alcohol)
- Bake and freeze:
2 Weeks Before
- Review menu
- Organize all dishes and glasses and serving platters
- Reconfirm extra help
1 Week Before
- Confirm guest list: Will there be 26 or 16?
- Finalize menu
- Buy and store ice, and any additional beverages
Monday
- Set-up table, dishes, glasses, silverware, serving platters, utensils and napkins
Tuesday
- Do all grocery shopping except for ground lamb, shrimp and crab claws
- Wash and store all vegetables
Wednesday
- Chop all onions for all recipes
- Roast garlic
- Roast jalapenos
- Buy flowers
- Organize playlist
Thursday
- Arrange flowers
- Grill zucchini and eggplant for Crostini
- Bake Parmesan Crackers
- Prepare Raita
- Prepare Mustard Garlic Aioli and Aioli
- Prepare and make Mocha Pot de Creme and refrigerate until Saturday
- Thaw in refrigerator all pastry dough, phyllo dough and pie crusts
- Make Peach Chutney
Friday
- Prepare Rice Pudding
- Prepare Kaleakopita filling
- Prepare caramelized onions
- Chop tomatoes and roasted garlic for Mozzarella Tart
- Prepare onion filling for Individual Onion Pies
- Whip Cream for Pot de Creme
Saturday
MORNING:
- Prepare and bake Kaleakopita
- Buy: ground lamb, shrimp and crab claws
- Prepare and sear all Lamb Sliders (These will be finished in oven.)
- Prepare and bake Veggie Frittatas (These will be served room temperature.)
- Take all cheese out of refrigerator
- Thaw White Chocolate Ganache
AFTERNOON:
- Prepare and bake Mozzarella Tart
- Prepare and bake Tapenade Tart
- Arrange Cheese Platter
- Prepare and make Cauliflower Fritters
- Fill and bake Individual Onion Pies
- Finish and assemble Lamb Sliders
LATE AFTERNOON:
- Assemble Crostini
7:00 P.M.:
- Have a Basil Pomegranate Martini and welcome your guest.
